Highlights of Year 5 include increased milk production, record specialty cheese production, marked reinvestments by producers and processors, and new and expanded operations.
Value Added Dairy Initiative Annual Report 2007-08
Year 4 proved to be an exciting time in Wisconsin’s dairy industry as milk production increased to 24.1 billion pounds, the highest level since 1990. Specialty cheese production and the number of plants opening and modernizing were also on the rise in 2007.

In Year 3, Wisconsin continued to innovate and grow its $20.6 billion dairy industry, with more processors and producers choosing to modernize and reinvest in their operations.
